asian prawn dumplings

asian prawn dumplings, black vinegar chilli ginger dressing

 

makes 50 dumplings

 

prawn dumpling mix

1kg prawn meat

2 – 3 knobs finely chopped fresh ginger

1 bunch fresh coriander, washed and finely chopped

salt and pepper to season

1 finely chopped shallot

50 wonton wrappers

 

mix all ingredients into a bowl and mix together well

place into a large piping bag

 

pipe dumpling mix onto individual wonton wrappers

with your fingers make individual squares into a tortellini shape

place onto plate

cook in boiling water for 2-3 minutes

 

asian dumpling sauce

750ml canola oil

150g dried long red chilli

50g ginger julienne

130g fried eshallot

130g fried garlic

1 tbls salt and pepper

2 tbls caster sugar

350ml soy sauce

350ml black vinegar

300ml chilli oil

 

fry long red chillis in canola oil

stirring continuously until crispy, about 15 seconds

keep the oil and drain chilli on paper towel

in same oil fry off ginger julienne

strain the oil

set aside

 

in mortar & pestle pound the fried red chilli, ginger, eshallot and garlic into a paste consistency

add the black vinegar, soy and 300ml of the strained frying oil to the mortar & pestle, season with salt, pepper and sugar to taste

 

place 6 dumplings onto bowl plate and pour over asian sauce

garnish with fried shallots and fresh coriander
