Recipe: Salumi Australia Sausage Ragu

This heart-warning, slow-cooked Ragu dish has been one of our most requested menu items for 2017. It’s star ingredient is a locally-made, fresh pork sausage – Salsiccia Fresca – from Salumi Australia.

Our head chef, Enrico Semenzato, shares his recipe:  

This recipe makes 10 serves.

What You’ll Need:

2 red onions

2 garlic cloves 

10 sage leaves 

1kg Salumi Australia Salsiccia Fresca – fresh pork sausage

250g of tinned whole tomatos

Maltagliati pasta

Grated fresh parmesan


In a very hot pan fry the sausage with a little bit of oil

When the sausage is sealed add the onion, garlic and sage all roughly chopped

Cook until tender, then add the squeezed tomato

Bring to a simmer, cover and cook on low heat for one hour and a half

Cook your Maltagliati pasta, drain and toss through your Ragu

Serve with grated fresh parmesan
